Basic AIP Pancakes Recipe

AIP pancakes recipe is a staple breakfast that everyone loves! Its adaptable and filling making it the perfect way to start the day.

Serves 1

Ingredients:

  • 1 Ripe yellow banana.
  • 1 Table spoon of desiccated coconut.
  • 1 Table spoon of coconut flour.
  • 1/2 tbsp of Organic extra virgin coconut oil.

Directions:

  • Mash the banana and desiccated coconut together then add the flour to bind it together.
  • Pick up the mixture and mould with hands to make a burger shaped pancake.
  • Add the coconut oil to a frying pan and heat on a very low heat. Add the pancake and cover for about 2 minutes checking that it doesn’t burn.
  • Flip over carefully and cook the other side, repeat if necessary.
  • You don’t need to cook this much as it is ok to eat raw, you are just trying to warm it through and get a bit of colour. Use more oil if you want it to be more crispy and hotter.

Serve with a few blueberries or sliced apple, gently fried with coconut oil and cinnamon. pancake_mixture

Serves 2

  • 1 Large ripe and soft pear.
  • 2 Table spoon of desiccated coconut.
  • 2 Table spoon of coconut flour.
  • 2 tbsp of Organic extra virgin coconut oil.

Directions:

  • Mash the banana, pear and desiccated coconut together then add the flour to bind it together.
  • Pick up the mixture and mould with hands to make a burger shaped pancake.
