Ice Ice Baby!

As the hot weather is starting to show, and the heating is staying switched off we are reminded of the hot summer days approaching and now is the perfect time to start making ice cream – woahhh I hear a few gasps “I aint got time for that, it takes ages and you need an ice cream maker.” Well my friends thats not the case anymore! If you love fruit you will love my new AIP strawberry ice cream recipes. Simple 2, 3 or 4 ingredient easy peasy ice cream. You can use any fruit and it has no nasty hidden chemicals etc. Just clean, delicious, soft ice cream in just a few minutes!

All you need to do is wash and prepare your fruit and freeze. Then when you fancy a sneaky bowl of lushness get the blender out and in just a minute you have a tasty bowl of yumminess.

AIP Ice Cream

Serves 2

  • 2 bananas, cut into 1-inch slices (frozen)
  • 2 cups of strawberries, hulled and frozen
  • Cup of coconut milk
  • 1/2 tsp of vanilla (optional)

  •  Remove fruit from the freezer and place with the vanilla in your nutria bullet or blender, add a dash of coconut milk and blend. Keep adding the coconut milk to loosen the consistency and blend until smooth and well mixed.
  • Scoop and go!

It’s that easy and any frozen fruit can be used, experiment and I’d love to hear your recipes. 😉
