Juicy Bacon Chops with Butternut Squash, Fennel and Parsley

Serves 2

Ingredients:

  • 2 bacon chops
  • Half a butternut squash
  • 1 fennel bulb medium size roughly chopped
  • Big handful of flat leafed parsley leaves
  • 1/4 tbsp Turmeric (ground dried)
  • 1 tbsp of organic extra virgin olive oil
  • Pinch of sea salt

Directions:

  • Place the ingredients in a large cooking pan and mix to spread the oil and turmeric.
  • Takes about 40 mins on a 200c/6/400f
